TOMATO SAUCE (Salsa di pomodoro)

This sauce is so versatile to make in large quantities.  Use it with meat- or chicken balls, cannelloni, and spaghetti and just as good a spoon or two when you're steaming mussels!  For lasagne leave out the basil and substitute it with one small diced fried eggplant.  The eggplant is minced with the sauce in the end.  There is really no end to this sauce. Because it is so easy to make a meal with it in 15 minutes, the kid's love to take it with them.  It can be spiced up with a chili or two if you like?
